Having gone to college in New Orleans, I love a tasty po’ boy sandwich! Now that I no longer live in the Big Easy, I sometimes make recipes that give me a taste of New Orleans. Today’s recipe is for a simple Okra and Shrimp Sandwich made with lightly breaded okra and sautéed shrimp on bread with lettuce and pickles.

Simple Okra & Shrimp Sandwich Recipe
Unlike a traditional shrimp po’boy, this sandwich doesn’t need fried shrimp since the okra provides crunchy cornmeal coating. That makes this recipe quick and easy for weeknights.
Another time saver is that you don’t need a po’boy sauce – just use mayo. The lemon juice will be on the shrimp and pickles go right on the bread instead of in a tartar sauce. All the flavors are there.
Ingredients:
- French bread or hoagie rolls
- Fresh shrimp, peeled and deveined
- Lemon
- Butter
- Olive oil
- Creole seasoning
- Pictsweet breaded okra
- Lettuce, chopped
- Tomato slices
- Dill pickles
- Mayonnaise
How to Make the Sandwich
First, preheat air fryer and cook okra for 10 minutes. Slice lettuce and tomatoes while okra cooks.
Next, rinse shrimp and pat dry. Cook in skillet with butter, oil and Creole seasoning for 3-4 minutes per side until pink. Squeeze lemon juice over shrimp.
Slice bread lengthwise, leaving a hinge. Lightly toast if desired.
Assemble sandwiches by spreading mayo on top slice of bread. On bottom slice, layer lettuce, pickles, tomato, shrimp and okra.
Serve with chips and hot sauce for a taste of New Orleans!
