Having gone to college in New Orleans, I love a tasty po’ boy sandwich! Now that I no longer live in the Big Easy, I sometimes make recipes that give me a taste of New Orleans. Today’s recipe is for a simple Okra and Shrimp Sandwich made with lightly breaded okra and sautéed shrimp on bread with lettuce and pickles.

Pictsweet Farms® Air Fryer Vegetables

The lightly breaded okra is easy to make crispy using Pictsweet Farms® Vegetables for the Air Fryer. Even if you’ve never tried okra, the cornmeal coating on fried okra makes it very tasty. The air fryer gives it a delicious crunch without deep frying.

I like the air fryer for quick and healthier cooking at home. The Pictsweet Farms® Seasoned Lightly Breaded Okra I found in the freezer section cooks up nicely in 10 minutes. The cornmeal coating and okra take me back to my Louisiana roots and tastes great.

These new Pictsweet Farms® Air Fryer Vegetables are quick and easy dinner solutions for busy families like mine. They come pre-seasoned and cook in just 10 minutes for remarkable flavor. Other varieties to try include:

  • Pictsweet Farms® Seasoned Asparagus Spears
  • Pictsweet Farms® Seasoned Brussels Sprouts
  • Pictsweet Farms® Seasoned Cauliflower
  • Pictsweet Farms® Seasoned Potatoes, Onions & Peppers
  • Pictsweet Farms® Seasoned Mexican Street Corn

Now let’s get into this easy okra and shrimp sandwich recipe.

Simple Okra & Shrimp Sandwich Recipe

Unlike a traditional shrimp po’boy, this sandwich doesn’t need fried shrimp since the okra provides crunchy cornmeal coating. That makes this recipe quick and easy for weeknights.

Another time saver is that you don’t need a po’boy sauce – just use mayo. The lemon juice will be on the shrimp and pickles go right on the bread instead of in a tartar sauce. All the flavors are there.
