Simple Gluten-Free S’mores Snack Mix

Since May, my family has been eating gluten-free due to my 2 1/2 year old’s Celiac Disease diagnosis. We’ve been adjusting pretty well overall but finding affordable gluten-free snacks and treats that aren’t full of junk has been a challenge. We don’t eat many sweets but a special treat now and then is fun. That’s why I came up with this s’mores gluten-free snack mix recipe which has been a huge success.

We had a campfire last weekend and made s’mores, but my little guy had to skip the graham crackers since we couldn’t find gluten-free ones on that shopping trip (probably sold out after the holiday weekend). That inspired me to make this tasty S’mores Gluten-Free Snack Mix this week so he could enjoy some of the flavors of s’mores anytime. The kids all say it’s amazing – like a cross between s’mores, chex party mix, and puppy chow!

Delicious S’mores Gluten-Free Snack Mix Recipe

Ingredients:

  • 3 cups corn or rice cereal squares (Corn Chex and Rice Chex are gluten-free, Wheat Chex is NOT)
  • 2 cup dark chocolate chips (divided)
  • 1 tbsp butter
  • 2 cups mini marshmallows (divided)
  • 1 cup powdered sugar
  • gluten-free dry roasted peanuts
  • gluten-free pretzels

Notes:

  • Not all corn or rice cereal is gluten-free. If gluten-free is important, check labels before buying. Chex brands make gluten-free versions in various flavors which worked great in this recipe.
  • Not all pretzels are gluten-free. Look for brands like Snyder’s of Hanover, Snack Factory, and Good Health that specifically say “gluten-free”.

How to Make Gluten-Free S’mores Snack Mix:

Combine 1 cup dark chocolate chips and butter in a microwave-safe bowl. Microwave on high for 30-35 seconds, stir, then microwave for another 20-30 seconds until chocolate is smooth and completely melted.

Add 1 cup mini marshmallows to the chocolate mixture, stirring to combine. Microwave for 30 more seconds. Stir until smooth. Don’t overheat or the chocolate will get thick and stiff.

Pour the chocolate, butter, and marshmallow mixture over the 3 cups of cereal in a large bowl. Stir to coat but be careful not to crumble the cereal too much. Let cool completely.

Once the chocolate-coated cereal has cooled, add the powdered sugar a little at a time, stirring and tossing to coat.

Next, stir in the peanuts, gluten-free pretzels, remaining chocolate chips, and remaining marshmallows.
